Recipe – Stewed Rhubarb

May is a lovely time of year especially if you grow your own vegetables at home. I was lucky enough to enjoy some home-grown rhubarb the other day that a friend had provided me with from there garden. I simply stewed the rhubarb and enjoyed it with some vanilla ice cream.


500g rhubarb, cut into inch long pieces

1 orange , zest and juice

100g caster sugar


Put the rhubarb into a saucepan with the orange zest, juice, sugar and 2 tbsp water. Bring to the boil then simmer for 8 mins until the rhubarb is cooked but still holds its shape.
